• Quinoa Crust Pizza (soaked)

    Here are the ingredients.

    • 3/4 cup quinoa soaked for 8 hours
    • 1/4 cup water
    • 2 garlic cloves
    • 1/4 cup cheese (use any kind. I will use a mozzarella Vegan cheese by Daiya )
    • 1/2 teaspoon  each of seasonings of your choice, eg. pepper, italian, oregano. maybe some fresh herbs.

    Blend all ingredients in your Blender. I use the Vitamix. Starting on the 1st speed and increasing no more then 4 until a smooth consistency is reached. This amount will make one large flat bread using a Baking Sheet . You could use foil but I will use parchment paper and spread the mixture with a silicone spatula covering the sheet to desired thickness.

    Preheat oven to 375 degrees F and bake for 15 – 20 mins. Once crispy around the edges take out and flip the pizza crust.

    I add whatever toppings I like and have around. This time its a vegetable sauce, ketchup, hot sauce, feta cheese, bacon, red onion, mushrooms. spinach  topped with shredded havarti and cheddar cheese.

    Bake for 5 or so minutes more and it should be good to go.

    This is about 4 servings for me, great to share with friends. I have added the recipe to my MyFitnessPal account. As ‘ Pizza Crust w soaked quinoa’ and  another entry ‘Homemade Pizza’ which is just a list of the ingredients used for the toppings to make the pizza.
